Our favourite recipe combination of 2021

I know, this post is stretching the category “Baking” and it doesn’t even use sourdough, but I feel like I need to tell you about our favourite recipe combination of the summer.

The chicken recipe calls for a package of naan bread, but it is so easy to make naan 🙂

The spice mix alone is great, I have used it in other recipes too. The amount of spice mix in the recipes is good for several dinners.

Today I ended up buying “chicken tenders” and they worked great. Sometimes I just cut chicken breast – finding chicken cutlets in the regular grocery store seems to be difficult and not really necessary. I put the chicken on the BBQ and it is much easier to grill the smaller pieces than a whole chicken breast. The other ingredients are really optional. Today we had cherry tomatoes from our vines and I had cabbage in the fridge. We usually use ready made tzatziki from the store.

There are several naan recipes in my collections, including a few that use sourdough. But this one from King Arthur Baking is simple, easy and sooo tasty. I use olive oil in the dough and I use a dry cast iron pan to bake them. Aside from the fact that they turn out great, the house smells amazing 🙂 .

Naan often seems very oily when you get it in the restaurant. I don’t use any oil on top of the finished bread and we eat it right away. That way we save some calories.

According to our calculations, a portion of this dinner has about 422 calories.
